Coloque o vinagre balsâmico em uma panela, quando começar a ferver adicione duas colheres de sopa de açúcar mascavo e misture em fogo baixo.
Deixe ferver lentamente e mexa de vez em quando para que não pegue ao fundo, até reduzir para um pouco mais da metade.
Deixe que esfrie por completo e em seguida guarde em um recipiente.
Coloque as folhas de gelatina em um recipiente com água fria.
Em uma panela, junte o creme de leite fresco, o leite, o açúcar, a fava de baunilha aberta ao meio e com as sementes retiradas e o açúcar. Deixe ferver e em seguida retire a fava de baunilha e mergulhe as folhas de gelatina escorridas.
Misture até que a gelatina esteja dissolvida. Coloque a mistura em forminhas pequenas redondas, como as de muffin.
Para a calda coloque os morangos com o restante açúcar mascavo e um pouco de água em uma panela em fogo baixo. Deixe que ferva, que o açúcar se dissolva e que os morangos cozinhem ligeiramente.
Retire metade dos morangos e reserve. Os restantes triture com a ajuda de um mixer.
Desenforme as panacottas, decore com os morangos, acrescente a calda com a redução de Gallo Vinagre Balsâmico de Modena. Bom apetite!
