1 xícara (chá) de frango assado (ou cozido) e desfiado
½ alho-poró
¼ de xícara (chá) de ervilha congelada
¼ de xícara (chá) de queijo de iogurte caseiro
2 colheres (sopa) de água filtrada
2 ½ colheres (sopa) de azeite
sal e pimenta-do-reino moída na hora a gosto
cubos de gelo para resfriar o macarrão
Leve ao fogo alto uma panela média com água.
Quando ferver, adicione ½ colher (sopa) de sal e junte o macarrão.
Deixe cozinhar até ficar al dente – para usar o macarrão como salada, retire da água 1 minuto antes do tempo indicado na embalagem.
Enquanto isso, separe uma tigela com água e gelo e prepare os outros ingredientes.
Corte e despreze a raiz e folhas do alho-poró.
Lave e corte o talo ao meio no sentido do comprimento.
Corte uma das metades ao meio, no sentido da largura, e fatie cada parte em tiras finas de cerca de 0,5 cm – reserve a outra metade na geladeira para uma próxima receita.
Leve ao fogo médio uma frigideira.
Quando aquecer, regue com ½ colher (sopa) de azeite e adicione as tiras de alho-poró.
Tempere com uma pitada de sal e refogue por cerca de 5 minutos até dourar.
Transfira para uma tigela e reserve.
Assim que o macarrão estiver cozido, transfira para a tigela com água e gelo com a ajuda de uma escumadeira – este processo é importante para esfriar e interromper o cozimento da massa.
Mantenha a panela com água fervente no fogo e mergulhe as ervilhas congeladas.
Deixe por apenas 1 minuto para descongelar e junte ao macarrão na água com gelo.
Passe o macarrão e as ervilhas por uma peneira e deixe escorrer bem a água.
Transfira para uma tigela de servir e junte o queijo de iogurte.
Regue com a água filtrada e acrescente 2 colheres (sopa) de azeite.
Tempere com sal e pimenta do reino a gosto e misture bem.
Coloque o frango desfiado sobre o macarrão e finalize com as tiras de alho-poró douradas.
